Egg Tempura Batter

We use several Gluten free batters. This is a pretty universal ‘Tempura’ style batter. We add a little bit of Turmeric as it looks a bit pallid without.

The main trick is to deep fry at 180c in small batches so the batter doesn’t clump before the outside cooks.

Ingredients:-

2 Eggs
Plain Flour (Gluten free for us)
Soda Water
Garlic Salt
Turmeric

Additional flour
1 Egg, battered for an Egg wash

Method:-

Regardless of what you are battering dredge it in Flour, Egg wash and then Flour again. You can then dunk small batches in the batter mix and it will stick well.
