
After our little fight with COVID (Twice as it happens) we’ve both got odd long COVID issues. Allergies which were long forgotten like Hay Fever etc. But the most restrictive for Sue has been that it has triggered Lactose Intolerance. Coeliac Disease and Lactose Intolerance often go hand in hand, but Sue had side-stepped it until recently.
So we’re having to alter our diet to exclude Milk. This is a bit interesting for Cream based sauced, but I think we’ve got it…..
But the Nut Milk gig is not the only notable item in this recipe. The Mushrooms were Pine Boletes which I gathered myself. Food always tastes better if you have some engagement with it.
Ingredients:-
425g of Rump Steak, cut into thin strips
1 Onion, finely sliced
3 Cloves of Garlic, minced
6 Pine Bolete Mushrooms, cleaned and sliced (Dries wild mushrooms soaked will work)
1 Tsp of Dijon Mustard
200ml of Beef Stock
200ml of Lactose free Milk
2 Tbsp of Cashew nuts, ground
1 Tbsp of chopped Parsley
1 Tbsp of Cornflour
1 Tbsp of Margarine
Oil to fry
Salt & Pepper to season
Method:-
(1) Add the Stock to the Cornflour and season with Salt & Pepper.
(2) Fry the Steak strips in a little oil until browned, remove and set aside.
(3) Add the Margarine to the pan and fry the Onions until softened.
(4) Add the Garlic and cook for a further 2 minutes.
(5) Add the Mushrooms and cook until softened.
(6) Season to taste at this stage.
(7) Add the Beef Stock combination and allow to simmer for 2 minutes.
(8) Add the Cashew Nut Powder to the Milk and mix well.
(9) Add this to the pan along with the Mustard.
(10) Return the Steak to the pan and simmer for a further 5 minutes.
(11) Garnish with fresh Parsley and serve over boiled Rice.
Served over boiled Rice this was just as good as a Cream based sauce and the wild Mushrooms have a very intense flavour. Next year we will almost certainly do this gig again. But the season for Pine Boletes is about 4 days a year!

Sue has family in Wales and we were looking for another recipe project. So Welsh recipes it is….
Ingredients for the Laver Cakes:-
2 Tbsp of Laverbread (We bought this in a tin as it’s a long walk to Wales to harvest out own!)
3 Tbsp of Gluten Free Quinona Flakes
2 Tbsp of Buckwheat Flour
2 Tbsp of Cockles
Method:-
(1) Combine all the ingredients.
(2) Divide into two patties.
(3) Fry in a little Oil on a medium heat for 3 minutes on each side.
(4) Dress with a little Laver and a few Cockles to serve.
Apart from the Laver Cakes the other components were, A fried Egg, Pork and Caramelised Onion Sausages, Bacon, Baked Beans, Baby Tomatoes and fried foraged Pine Bolete Mushrooms.
The Laver Cakes are Sue’s modification using Quinona Flake to replace the Oats, so the Cakes are Gluten Free. If you can tolerate Oats, that would be more tradition. But they were really good!

Well it looks like we have invented something new. A couple of days ago Sue said “Why don’t we batter some of the Waffles next time?” Well that sounded like an interesting idea. I suggested that we add cubes of Cheese in the holes through them. That’s how our version of culinary insanity works sometimes!!!!
So if you fancy a bit of fun while bringing plain old Waffles to an entirely new level, have a pop at this…..
Ingredients:-
Frozen Potato Waffles
Cheese (Lactose free for us)
For the Batter:-
1 Tbsp of Gram Flour
5 Tbsps of Cornflour
Salt & fresh ground Black Pepper to season
1 Tsp of Chilli Flakes
1 Tsp of Garlic Powder
1 Tsp of Onion Powder
2 Tsps of Baking Powder
2 Tsps of Turmeric
Soda Water
Method:-
(1) Keeping the Waffles frozen, cut cubes of Cheese to fill all the holes.
(2) Return to the freezer.
(3) Add Cornflour to a plate and kitchen paper to a separate plate.
(4) Mix the Batter ingredients with enough Sofa Water to make a thick batter.
(5) Remove the Waffles from the freezer.
(6) Heat a deep fat fryer to 170c.
(7) Coat the Cheese stuffed frozen Waffles in Cornflour.
(8) Fully coat with the batter.
(9) Fry individually, turning over four times, until the Batter is puffy and browned.
(10) Remove and drain.
Apart from being really good and dreadfully filling these tick all the boxes for Sue dietary requirements. They’re both Gluten and Lactose free. Also effectively Vegetarian, if that’s important to you.
Don’t expect to eat much else on your plate! We served these with a Steak, Sweet Corn in Garlic Better and DIY Peppercorn Sauce. We didn’t get to watch TV last night, we were like a pair of upturned Turtles!!!!!!

Some of the lowest price cuts of Beef have the most flavour provided that you cook them low & slow. Your friendly Slow Cooker is idea for this…..
Ingredients:-
500g of Skirt Beef
1 Onion, Sliced
60ml of Olive Oil
1 Tsp of Ground Cumin
1 Tsp of dried Tarragon
1 Tsp of Oregano
½ a Tsp of Chilli Flakes
1 Tin of Chopped Tomatoes, plus half of the tin of Water
1 Bulb of Garlic, peeled and separated
2 Bay Leaves
300Ml of Beef Stock
100g of Mushrooms, sliced
Salt & Pepper to season
Method:-
(1) In the Slow Cooker add the sliced Onions then lay the Skirt on top.
(2) Combine the Oil, Cumin, Tarragon, Salt, Pepper, Oregano and Chilli Flakes.
(3) Drizzle this over the Meat.
(4) Add the Tomatoes, Water and Stock over and around the Meat.
(5) Add the Mushrooms and Bay Leaves.
(6) Gently stir.
(7) Cook on ‘High’ for 5 to 6 hours or until the Beef is very tender..
(8) Find and remove the Bay Leaves before serving.
We served ours with Broccoli and Mashed Potatoes. The flavours and texture were really good. A proper Autumn warmer. This would easily have fed 4 people. The remainder will be used over a giant Toad-In-The-Hole tonight…...

This bit of Loin cost us just over £3. We had a stir-fry the other evening and I cut these two thick Chops out of the rest of it. So Meat wise this was an ‘in budget’ meal. The Nuts were free, I just collect them when they fall. So all in all, not a bad gig price wise….
Ingredients:-
2 Thick Pork Chops
2 Cloves of Garlic, minced
½ Tsp of Dried Rosemary
30g of Breadcrumbs (Gluten free for us)
30g of Hazelnuts, Roasted and ground
2 Tbsp of Olive Oil
Salt & Pepper to season
2 Tbsp of Margarine (Dairy free for us), melted
Method:-
(1) Mix all the ingredients.
(2) Pre-heat the oven to 180c.
(3) Press the crust paste onto both sides of the Chops.
(4) Place in the oven on a tray and cook for 15 to 20 minutes, depending on the thickness of the chops.
We served ours with hand cut Chips, a little salad for colour, a fried Egg and Beans. This crust was really good. When we were sorting through the left-overs this morning I chose the coating over the last bits of Meat - That never happens!
